Closing Checklist – Sips & Souls Cafe

Status: LIVING – Please mark up this document with edit suggestions, changes, etc. Revised: 3/21/26


At Close

  • Turn off OPEN signs (front window, fulfillment window)
  • Flip door signs to CLOSED (front and back)
  • Lock front door
  • Verify fulfilment room door is locked
  • Turn off outdoor speaker volume (Zones 1 and 2)

2-Person Close: Bar + Floor

Bar and Floor tracks run in parallel. Assign before starting.


BAR TRACK

Equipment Shutdown

  • Espresso machine: full Cafiza clean and backflush (see posted Espresso Cleaning SOP)
  • Grinders: end-of-day per manufacturer procedure (see grinder SOP; Femobook has a daily maintenance process)
  • Drip brewer(s): turn off, remove grounds from basket, empty and rinse carafe(s)
  • Hot water dispenser: turn off (TBD – confirm)
  • Oven: check trays for grease and clean if needed
  • Empty knock box, rinse
  • Clean pitcher rinsers

Bar Cleaning

  • Wipe down bar surfaces
  • Drip trays: remove grate, wipe in sink, wash tray with remaining Cafiza solution
  • Pastry case: remove trays, clean trays, wipe interior as needed
  • Undercounter fridge: check contents, discard anything expired.

FLOOR TRACK

Seating Area

  • Bus all tables: collect dishes, cups, trash
  • Wipe down all tables and chairs
  • Stack chairs
  • Check and clean condiment/sugar station

Bathroom

  • Clean toilet, sink, mirror
  • Restock toilet paper, soap, paper towels
  • Empty trash
  • Mop floor

Pastries & Ice

  • Handle unsold pastries:
  • Fruit/cheese items → staff takes home
  • Others → wrap individually in plastic wrap, label with date, store at room temp
  • Any day-old pastries still unsold → discard/staff takes home
  • Check bagged ice supply: note if low for next shift
  • Grab & Go fridge: wipe exterior

Together (after tracks complete)

  • Run all dishes through 3-compartment sink
  • Clean and sanitize sink area

Floors & Trash

  • Sweep bar, seating area, under furniture, fulfilment room
  • Vacuum seating area
  • Collect all trash from: bar, seating area, bathroom, back of house
  • Replace trash bags in all cans
  • Take trash to dumpster out back
  • Take recycling to bins next to dumpster (single stream)
  • Turn off Grab & Go fridge light
  • Mop bar, seating area, fulfilment room (last – floors will be slippery)
  • Rinse mop, return supplies to utility closet

Cash & POS (Manager)

  • Run End Day on SpotOn POS
  • Count all bills - target float: $150.00
  • Record any variance on cash-out report
  • Complete day envelope (report + excess cash)
  • Drop envelope in drop safe

Lockup (last person out)

  • Turn off indoor music. Return Zone 1 and 2 to level 1.
  • Turn off main lights
  • Set pendant lights to near-lowest setting
  • Verify front door is locked
  • Arm alarm system
  • Exit via back door and lock behind you

Notes

  • Closing is handled by whoever is on the last shift (minimum 2 people)
  • If anything is broken or running low, note it for the next shift (TBD - bulletin board?)
  • As hours expand, Saturday close (10pm) may need additional steps vs. weekday close (4pm)
