Espresso Machine End-of-Day Cleaning – LN-213AD

Supplies

  • Red sanitizing bucket
  • Cafiza espresso cleaner
  • Paleo brush (dual-ended: brush + scoop)
  • Blind basket (solid, no holes)
  • Clean towels / bar rags

Procedure

1. Prepare Cafiza Solution

  • Fill the red sanitizing bucket with scalding hot water from the 3-compartment sink
  • Add Cafiza to the bucket

2. Scrub Group Head

  • Soak the Paleo brush in the Cafiza solution
  • Scrub the shower screen until clean
  • Scrub inside the group head crevices until clean

3. Backflush with Cafiza

  • Using the scoop end of the Paleo brush, add one scoop of Cafiza into the blind basket
  • Insert the blind basket into the portafilter and lock into the group head
  • Hold the single dose (single shot) and manual shot buttons simultaneously for approximately 3 seconds
  • The buttons will begin to flash – this starts the automatic backflush cycle
  • Wait for the lights to stop flashing (cycle complete)
  • Remove the portafilter and rinse the blind basket

4. Rinse Backflush (VERIFY – does this step happen?)

  • Re-insert the blind basket (empty, no Cafiza) into the group head
  • Run the same button sequence to flush with clean water
  • Repeat once more if needed to clear all Cafiza residue

5. Drip Tray

  • Remove the grate from the drip tray
  • Take the grate to the sink and wipe clean
  • Pour remaining Cafiza solution over the drip tray to wash it (the drain is plumbed in)
  • Wipe the drip tray dry

6. Final Wipe-Down

  • Wipe down the portafilter(s)
  • Wipe the exterior of the machine and the group head area
  • Return portafilter to the group head (locked in loosely, or left off? – TBD)

Open Questions for Harrison

  • Step 4 (rinse backflush) – does this happen, or does the auto-cycle handle rinsing?
  • Portafilter storage – left in the group head overnight or removed?
  • Steam wand – any end-of-day cleaning beyond the usual purge-and-wipe during service?
  • How often does the group head gasket get a deep clean vs. just this daily procedure?
  • Any weekly/monthly maintenance cycle?
